Ingredients
Instructions
  1. Line muffin tins with paper liners or lightly grease.
  2. Preheat oven to 400°F
  3. In a medium bowl combine the yogurt, 1 cup milk, and cream of wheat – set aside for about 15 minutes or more.
  4. In a large bowl, whisk together the eggs and sugar.
  5. Continue whisking while slowly drizzling in the oil.
  6. Mix in the bananas, vanilla and remaining 1 cup milk.
  7. In another medium bowl mix the flour, baking powder, baking soda, salt and mini chocolate chips together.
  8. Add the cream of wheat mixture and flour mixture to the banana mixture, alternating between the two and ending with flour.
  9. Scoop into the prepared muffin tins, filling right to the top.
  10. *Optional* Sprinkle a few additional mini chocolate chips on top of the batter for each muffin
  11. Bake in preheated oven for 16 – 20 minutes, or until a tooth pick inserted in the center of a muffin comes out with a few moist crumbs.
