The recipe of choice this week is Chewy Chunky Blondies selected by Nicole of Cookies on Friday. As far as cookie bars go,blondies play a very close second to brownies as far as I’m concerned. Especially blondies that are full of chocolate bits and toffee pieces!
Unfortunately I ran into a bit of difficulty with this recipe. I have never had a problem with a blondie recipe before….

And I tried again (I didn’t even bother with pictures of this attempt)…
Before I finally gave up. No matter what I did they never finished baking in the center. I tried with different pans, different baking temperatures, and even variations on the recipe itself, all to no avail. Now I have 3 batches of under baked blondies that, with the exception of the edges, I really don’t think I can share with anyone else. Luckily I prefer my cookies, and cookie bars, under baked… too bad “Prince Charming” is not so thrilled with the slightly gooey texture.
I recommend giving these a try, but based on my experience I would suggest a few things:
1) Make the bars in a slightly larger pan (or scale back the recipe slightly) – the thinner bars will cook more evenly.
2) Use a light colored metal pan – darker and glass pans will cause the edges to cook more quickly.
3) Tent foil over the bars to slow browning on the top and allow for additional cook time as necessary.
