So, at the end of last week’s post I promised my very first product review/reader give away and I have failed to deliver. I do apologize, I won’t offer any excuses but sometimes life (or in this case work) just happens and we have to roll with the punches. “Prince Charming” is now assisting me with the product review so I will get it posted soon.
Now, on to this week’s TWD challenge selected by Spike of spike.bakes – Banana Coconut Ice Cream Pie (page 350)…
I’m running just a tad low on time (seems like that is the norm these days) so let’s get right to the point.
I know I’ve frequently stated that I don’t like chocolate and fruit together, but bananas are the exception. I have always been a big fan of the chocolate banana combo and throwing coconut into the mix only makes it better.
I didn’t see any reason why I should ruin it by adding rum so I decided to add peanut butter to my pie instead. I replaced a small amount of the butter in the crust with peanut butter and I replaced the rum (and then some) in the filling with peanut butter. I also used butter cookies with a layer of dark chocolate on them rather than plain ones in my crust.
With only two of us in the house to eat this I needed to find someway of getting the top layer of bananas on the pie without them getting destroyed in the freezer (especially since I forgot to put in the bottom layer of banana). My solution was to put a thin layer of soft ganache over the banana layer which sealed them in nicely and added a bit more chocolate to the mix (always a good thing in my book).
“Prince Charming” and I both found this pie to be quite tasty as a whole but I think it is fair to say that the crust stole the show. I think I could quite happily pass on the filling and eat just the crust – in fact I’ve been eating the filling out of the crust and saving the crust for last just to savor it a bit more.
