Here it is, 11:00pm on Tuesday night and I’m just now getting to post my TWD experience for this week – Chockablock Cookies (page 86) chosen by Mary of Popsicles and Sandy Feet.  I was quite pleased to see a cookie recipe for this week – easy to whip up, very portable and excellent for sharing.

Since I need to get this post completed and published before Tuesday runs into Wednesday, let’s get right to it…

I love cookies that are soft, chewy and have tons of texture – these certainly fit the bill and it never hurts that they have a healthy dose of chocolate in them as well.  I actually decided to make two variations on the original recipe.

The first variant is Caramel Toffee Pecan Chockablocks.  These have pecan pieces, toffee pieces, bitter sweet and semi sweet chocolate chunks, white chocolate bits, coconut and a swirl of caramel.

The second variant is Honey Roasted Peanut Chockablocks.  This time I used honey roasted peanuts, bitter sweet and semi sweet chocolate chunks, peanut butter milk chocolate swirled bits, coconut and a swirl of honey roasted peanut butter (which you can actually see in this picture!).

“Prince Charming” says he likes them both but prefers the peanut butter variant.  As he described it, they “taste like a peanut butter cookie and then get all crazy.” I really have a hard time choosing a favorite as I love both flavor combinations very much.  The Caramel Toffee Pecan ones flattened out more and have chewier texture.  The Honey Roasted Peanut ones held their shape very well and had a bit of a drier texture without as much chew.  I just can’t decide.  Luckily I made plenty so I really don’t have to – I can just have one of each every time 🙂
