Look at that, I’ve actually managed to participate and post two weeks in a row! I’m rather proud of that right now, of course that may not be saying too much.
This week’s selection of Coconut-Roasted Pineapple Dacquoise on pages 293-295 was made by Andrea of Andrea In The Kitchen. I have to say this one surprised me…
This recipe caught my eye several times while flipping through the book. It looks so pretty on the serving platter and I do like the combination of pinapple and coconut. I also like meringue and white chocolate, but I wasn’t entirely sold on the full combination. It also seemed like it was just too much trouble to put together.
As I was making the basic components of this dessert I, as is my habit in the kitchen, snuck a taste of each component separately. They were all ok, nothing really to write home about – and it really is a rather involved dish to build so I was starting to get a little worried.
By the time it was all assembled it was rather late (you may notice that I forgot to toast the coconut before decorating the sides of the confection, that is a small indication of how late it was and how tired I was feeling) so I just wrapped it up and popped it in the fridge.
Tonight I cut into it to get some pictures and “Prince Charming” and I gave it a taste. “Prince Charming”‘s eyes drifted closed and nearly rolled back in his head as he said “I feel like I’m on a beach somewhere.” This was followed by several repetitions of “it’s good!” I was also pleasantly surprised by the final combination of flavors. I think I would have liked to have had a larger pineapple to use, but that is more of a what if thought than a complaint. Over all I’d rate this one a success.
