Here we are; another Tuesday and another TWD recipe.  Let’s see if I manage to remember to click the publish button this time!

This week we have Tracey of Tracey’s Culinary Adventures to thank for choosing Dorie’s Cinnamon Squares.  The picture of these squares has been calling to me every time I flipped past it in the book.  The cake looks so moist and the frosting creamy and smooth. Alas, mine did not fulfill the expectations engendered by the picture…

The recipe seemed easy enough to make and, unlike a number of those who commented on the P&Q this week, I’m very fond of cinnamon and chocolate together.  The only change I made was to add some coarsely chopped candied pecans to the filling.  Other than that I played this one strictly by the book.

Still not seeing anything terribly wrong.  My filling did sink ever so slightly, but not all the way to the bottom and it formed a nicely defined layer.  The frosting looks a bit denser than in the photo in Dorie’s book.  But, all in all, it doesn’t look like a bad specimen.

Then, I took a bite.  I truly enjoyed the flavor combination.  I didn’t find that the cinnamon was too strong or that the chocolate was “too much.”  But the texture was just plain off.  The cake turned out too dry despite the fact that I was very careful not to over cook and to pull the cake from the oven as soon as the toothpick came out with a few moist crumbs attached.  Perhaps I will have to try this one again and adjust either the temperature or the time or the pan (something must change!).
