TWD: Caramel Pumpkin Pie

Posted by C. A. - Categoriezed under: TWD

This week Janell of Mortensen Family Memoirs picked Caramel Pumpkin Pie on pages 322 and 323.  This is certainly a great fall recipe pick but I quite the internal debate about whether or not to make it.  You see, I always make pumpkin pie for Thanksgiving, sometimes even multiple pumpkin pies for Thanksgiving; I really wasn’t sure I wanted to make one now.  On the other hand, “Prince Charming” is big into pumpkin pie and I was pretty sure he would love this one.

Ultimately I decided I would make this pie for “Prince Charming” with one tiny little change…

TWD: Double Apple Bundt Cake

Posted by C. A. - Categoriezed under: TWD

This week we can thank Lynne of Honey Muffin for choosing Double Apple Bundt Cake (pages 184 and 185). I may have mentioned before (in fact I’m pretty certain I have) that the only fruit I really like in a dessert is apples so I was pretty excited to give this cake a try.

Since I am (as always) cutting this pretty close to the wire, let’s jump right in…

TWD: Tarte Fine

Posted by C. A. - Categoriezed under: TWD

This week’s TWD recipe is Tarte Fine (page 315) selected by Leslie of Lethally Delicious.  Let me just reiterate, this week’s recipe is Tarte Fine NOT Tarte Tatin.

I did read the recipe line up, I knew it was Tarte Fine this week.  And yet, somehow I found myself sorting through my oven safe skillets for just the right size.  I rolled out the pastry dough, cut it in a circle, docked it and placed it in the refrigerator to firm up again.  I had 8 apples out and was just about to start preparing them for the Tarte Tatin before it finally occurred to me that I was looking at the wrong recipe.

I was able to recover and went on to make a very nice Tarte Fine more or less according to the script…

TWD: Coffee-Break Muffins

Posted by C. A. - Categoriezed under: TWD

It is Tuesday evening again and here I am at 9:00 PM  just beginning work on my post which means that, as usual, it will just barely squeak by the deadline.  I really did intend to get to this sooner; I had the best of intention but you know what they say about good intentions.  Why should this week be different than any other you might ask.  Well, this week’s recipe was selected by…me!  It is terribly rude for the hostess to be late, so I must beg your forgiveness…you do forgive me, don’t you?

Perhaps if I share some of my muffins with you….

TWD: Cranberry Upside-Downer

Posted by C. A. - Categoriezed under: TWD

This week Sabrina of Superfluous chose Cranberry Upside-Downer on page 206 of Dorie’s book.  Now, I’m not entirely sure how this could have happened, but it seems that this may be my very first upside down cake.  At least I can’t recall having made any variety of upside down cake before.

I still have cookies and cake and ice cream left over from “the Little Prince’s” birthday party but cranberries, pecans and a lightly spiced cake sounded like a winner to me…

TWD: Peanut Butter Crisscrosses

Posted by C. A. - Categoriezed under: TWD

This week Jasmine of Jasmine Cuisine selected Peanut Butter Crisscrosses on page 78 of Dorie’s book.  I thought these would make a nice extra treat for guests to munch on at “the Little Prince’s” first birthday party, so in the midst of making all the other food for the party not to mention the stress and excitement of making my very first children’s birthday cake (I will post pictures of that soon!) I managed to squeeze in this recipe as well.

TWD: Espresso Chocolate Shortbread Cookies

Posted by C. A. - Categoriezed under: TWD

This week’s TWD is Espresso Chocolate Shortbread cookies chosen by Donna of Life’s Too Short Not to Eat Dessert First. I know it has been a couple weeks since I have posted; “Prince Charming” and I are moving into a new house and needless to say I’ve been a tad bit busy. We have painted (or are still in the process of painting) all but a couple rooms in the house, closed off a redundant doorway and moved the entire contents of our old house plus a storage unit into the new house over the past few weeks.

I did, however, manage to clear enough space in my new kitchen to give these cookies a try. Unfortunately, I didn’t get a chance to snap any pictures yet, hopefully I can do that tomorrow.

I couldn’t make up my mind between the original recipe or Dorie’s playing around version so I ended up making both versions…with a couple of small tweaks.

For the espresso chocolate version, I increased the espresso by a smidge, replaced about 1/4 of flour with cocoa powder and upped the chocolate bits a little as well. I was very careful with my butter temperature and my mixing; the resulting texture was perfect (for shortbread, not necessarily my ideal) and they had a rich mocha flavor.

For the oatmeal spice version the only change I made was to add chocolate bits to them. Somehow I expected a bit more from this version, it fell a little flat for me. The flavor wasn’t bad, but the texture didn’t seem to match the flavor profile – the message my taste buds sent to my brain was that these should be chewy!

Head over to Donna’s site to grab the recipe for yourself (or check out Dorie’s book, of course).

TWD: Chocolate Ganache Ice Cream

Posted by C. A. - Categoriezed under: TWD

This week’s recipe is chocolate ganache ice cream chosen by Katrina of Baking and Boys…and can I just say wow?  My absolute favorite dessert in general is ice cream, more specifically chocolate ice cream, so it is really no surprise that this recipe was right up my alley.

The only question in my mind was what am I going to add to it…

TWD: Gingered Carrot Cookies

Posted by C. A. - Categoriezed under: TWD

Natalia of gatti fili e farina chose Gingered Carrot Cookies for this week’s TWD challenge.  At first I was somewhat ambivalent about this recipe.  I like carrot cake, but I don’t love it and I generally prefer my carrot cake minus all the traditional extras (i.e. coconut, raisins, nuts, etc.) and with a thick layer of cream cheese frosting on top.

However, after reading through the recipe a couple of times I decided I was at least a little bit excited about this one after all…

TWD: Chewy Chunky Blondies

Posted by C. A. - Categoriezed under: TWD

The recipe of choice this week is Chewy Chunky Blondies selected by Nicole of Cookies on Friday.  As far as cookie bars go,blondies play a very close second to brownies as far as I’m concerned. Especially blondies that are full of chocolate bits and toffee pieces!
