TWD: Coffee-Break Muffins

It is Tuesday evening again and here I am at 9:00 PM  just beginning work on my post which means that, as usual, it will just barely squeak by the deadline.  I really did intend to get to this sooner; I had the best of intention but you know what they say about good intentions.  Why should this week be different than any other you might ask.  Well, this week’s recipe was selected by…me!  It is terribly rude for the hostess to be late, so I must beg your forgiveness…you do forgive me, don’t you?

TWD: Espresso Chocolate Shortbread Cookies

This week’s TWD is Espresso Chocolate Shortbread cookies chosen by Donna of Life’s Too Short Not to Eat Dessert First. I know it has been a couple weeks since I have posted; “Prince Charming” and I are moving into a new house and needless to say I’ve been a tad bit busy. We have painted (or are still in the process of painting) all but a couple rooms in the house, closed off a redundant doorway and moved the entire contents of our old house plus a storage unit into the new house over the past few weeks.

I did, however, manage to clear enough space in my new kitchen to give these cookies a try. Unfortunately, I didn’t get a chance to snap any pictures yet, hopefully I can do that tomorrow.

I couldn’t make up my mind between the original recipe or Dorie’s playing around version so I ended up making both versions…with a couple of small tweaks.

For the espresso chocolate version, I increased the espresso by a smidge, replaced about 1/4 of flour with cocoa powder and upped the chocolate bits a little as well. I was very careful with my butter temperature and my mixing; the resulting texture was perfect (for shortbread, not necessarily my ideal) and they had a rich mocha flavor.

For the oatmeal spice version the only change I made was to add chocolate bits to them. Somehow I expected a bit more from this version, it fell a little flat for me. The flavor wasn’t bad, but the texture didn’t seem to match the flavor profile – the message my taste buds sent to my brain was that these should be chewy!

TWD: My Best Chocolate Chip Cookies

This week’s recipe was chosen by Kait of Kait’s Plate? – My Best Chocolate Chip Cookies from page 68 of Dorie’s Baking:  From My Home to Yours. I positively love chocolate chip cookies and I’m afraid I have to disagree with these being the “Best.”  It’s not that they are terrible, it is hard to find a terrible chocolate chip cookie, but I did find them disappointing.

TWD: Double Header

It’s Tuesday again and I find myself a week behind on my TWD posts.  I did in fact make last week’s Chocolate Armagnac Cake but between a death in the family and a stolen car I’m afraid TWD wasn’t exactly uppermost in my thoughts.  Rather than skip entirely I decided that I would combine two weeks of TWD into a TWD Double Header.

Triple Chocolate Mocha Cheesecake

Cheesecake is one of my favorite desserts and it is also one of my favorite recipes to play with.  I have made cheesecakes with apples, blueberries, chocolate, caramel, peanut butter, white chocolate, butterscotch, toffee…and the list goes on.  However, until today, I had not made a cheesecake with coffee.

As a general rule I’m not particularly fond of coffee – at least as a beverage.  When I do drink coffee it has so much cream, sugar and flavored syrup in it that I’m really not sure you could even call it coffee anymore.  That being said, it probably isn’t that strange that I love coffee ice cream, mocha ice cream, a little bit of coffee in my hot chocolate or even mocha flavored candy.  While I was growing up it wasn’t unusual for me to choose coffee milk even over chocolate milk as my beverage of choice.

So I got to thinking…why not a mocha cheesecake?  I can’t claim it is a completely original idea, but this recipe is my version so follow along and I’ll introduce you to my interpretation of mocha cheesecake…

Mocha Chocolate Chunk Brownies

I originally created these brownies as a crust for my Triple Chocolate Mocha Cheesecake.  I wanted something that would add to the mocha flavor and, while I positively adore a good graham cracker crust I am not quite as fond of the chocolate cookie crumb crusts.  I have used a number of brownie recipes as crusts for various cheesecakes in the past but none of them seemed quite right for a mocha cheesecake.  So, after rummaging through my recipe boxes and books and then taking a quick surf around the internet I pieced together this recipe.  As it turns out, these stand quite well on their own – they have a deep chocolate flavor with a hint of coffee and a nice fudgy texture.
