Prince Charming and I both love coconut and chocolate so the moment I came across this recipe on Two Peas & Their Pod I knew it belonged on my must bake list (that makes me sound much more organized than I am; mostly I just keep multiple browser tabs open on my computer for online recipes and I tuck scraps of paper in my cook books). This also happens to be one of those recipes that inspired me to make a few changes and develop my own version.
Natalia of gatti fili e farina chose Gingered Carrot Cookies for this week’s TWD challenge. At first I was somewhat ambivalent about this recipe. I like carrot cake, but I don’t love it and I generally prefer my carrot cake minus all the traditional extras (i.e. coconut, raisins, nuts, etc.) and with a thick layer of cream cheese frosting on top.
However, after reading through the recipe a couple of times I decided I was at least a little bit excited about this one after all…
So, at the end of last week’s post I promised my very first product review/reader give away and I have failed to deliver. I do apologize, I won’t offer any excuses but sometimes life (or in this case work) just happens and we have to roll with the punches. “Prince Charming” is now assisting me with the product review so I will get it posted soon.

I have a TWD double header going on this week. I really did make last week’s Dulce de Leche Duos and was all prepared to post about them on Tuesday but instead I had the pleasure of dealing with a broken refrigerator (which didn’t get fixed until the next morning anyway). After that I just never seemed to find a chance to post about the cookies until it just seemed to make more sense to combine two weeks worth of TWD into one.
And so, here we are…TWD two for one!
It seems like every week Tuesday arrives more quickly – here it is again and most of the past week is a hazy sleep deprived blur. But despite my sleep deprived state I found the time and energy to make Beryl’s (of Cinemon Girl) pick: Toasted-Coconut Custard Tart on pages 344 and 345.
I have very fond memories of eating my grandmother’s coconut cream pie as a child so I was looking forward to giving this recipe a try.
Look at that, I’ve actually managed to participate and post two weeks in a row! I’m rather proud of that right now, of course that may not be saying too much.

This week, for your TWD enjoyment, Amy of Sing for Your Supper selected Banana Cream Pie, found on pages 342 and 343 of Dorie’s book.
I really wasn’t sure how I felt about this recipe, I very nearly decided to skip this week, but “Prince Charming” has actually requested a banana cream pie off and on for – well probably for as long as he’s known I’m pretty good at making just about anything sweet. So I took another look over the recipe and decided to give it a whirl.
Tuesday has very nearly come and gone, so we’re aiming for a quickie this week.
