TWD: Chewy Chunky Blondies

The recipe of choice this week is Chewy Chunky Blondies selected by Nicole of Cookies on Friday.  As far as cookie bars go,blondies play a very close second to brownies as far as I’m concerned. Especially blondies that are full of chocolate bits and toffee pieces!

Unfortunately I ran into a bit of difficulty with this recipe.  I have never had a problem with a blondie recipe before….

But I tried…

And I tried…

And I tried again (I didn’t even bother with pictures of this attempt)…

Before I finally gave up. No matter what I did they never finished baking in the center.  I tried with different pans, different baking temperatures, and even variations on the recipe itself, all to no avail.  Now I have 3 batches of under baked blondies that, with the exception of the edges, I really don’t think I can share with anyone else.  Luckily I prefer my cookies, and cookie bars, under baked… too bad “Prince Charming” is not so thrilled with the slightly gooey texture.

I recommend giving these a try, but based on my experience I would suggest a few things:

1) Make the bars in a slightly larger pan (or scale back the recipe slightly) – the thinner bars will cook more evenly.

2) Use a light colored metal pan – darker and glass pans will cause the edges to cook more quickly.

3) Tent foil over the bars to slow browning on the top and allow for additional cook time as necessary.

    Sorry your blondies didn’t turn out the way you hoped. Everytime I make these they have a slightly gooey centre, but I just scoop it out and serve alongside ice cream. Your pictures do look great though!

    I’m sorry that these didn’t bake right for you. You could always save those pieces and toss them into some freshly churned ice cream! I agree…the pictures do look tasty.

    I wouldn’t necessarily say they didn’t work out – I much prefer underbaked to overbaked when it comes to cookies of any kind (in fact, I’m almost as happy with the dough as with the baked cookie!). The recipe just didn’t behave as expected and certainly didn’t end up looking like the picture in the book. On the one hand, pictures in cookbooks tend to be what draws you in and makes you want to try the recipes, on the other they are a source of frustration when, after following the recipe, the results don’t look like the picture in the book! :)

    Man, I think I would have quit after the second batch. Mine were probably a tad underbaked too, but that hasn’t stopped the hubby and I from devouring the pan of them. :)
