This week’s TWD challenge was selected by Amy of Amy Ruth Bakes. She made the excellent choice of Dressy Chocolate Loafcake on pages 286 and 287. There are just so many things to love about this recipe; chocolate (of course), ease of preparation, and size to name a few.
I wasn’t exactly thrilled by the filling Dorie uses – raspberry jam should not be within shouting distance of my chocolate cake. But that was easy enough to fix; I went with a peanut butter mousse and bittersweet chocolate ganache, one layer of each between each of the three layers of cake.
Why don’t I just let the pictures speak for themselves…
As you can see I decided to dedicate this cake to “Prince Charming” for Father’s day.
This shot reminds me of a cross section of a candy bar. It shows off the layers quite nicely as well as providing a glimpse of the cake’s texture. This was a somewhat dense cake, very moist and very chocolaty. In fact, this packed more of a chocolate punch than I was expecting based on the color of the batter.
I don’t know what more you could ask for; this cake delivers on the presentation and the flavor. It stands on its own with no need for whipped cream, ice cream or other frills. “Prince Charming” did think it needed a nice tall glass of milk along side it, though.

Wow, I really love the filling mod you made. I wanted to stay true to the recipe this time but yea, this would totally be great. Yours looks so pretty. I also thought it would be a good cake for an ice cream cake as well. I am thrilled that you liked the cake too. Thanks for your kind words and for baking along with me this week.
