I have a TWD double header going on this week. I really did make last week’s Dulce de Leche Duos and was all prepared to post about them on Tuesday but instead I had the pleasure of dealing with a broken refrigerator (which didn’t get fixed until the next morning anyway). After that I just never seemed to find a chance to post about the cookies until it just seemed to make more sense to combine two weeks worth of TWD into one.
And so, here we are…TWD two for one!
Here we have the dulce de leche duos. This is actually the second time I’ve made these – I ended up adding them to my Christmas trays last year – and I positively adore them! As you can see, mine differ slightly from the recipe since they have a chocolate filling (surprised? I didn’t think so!). To be more precise, they have a salted caramel and dark chocolate ganache filling. I love the contrast of the bitterness of the salt and chocolate with the sweet dulce de leche cookies.

And now on to this week – coconut tea cake, selected by Carmen of Carmen Cooks (page 194-195). I think I liked the idea of this cake more than I actually enjoyed the cake. Don’t get me wrong, I did enjoy the cake but I was expecting a bigger coconut flavor (perhaps if I make it again I’ll add coconut extract as well) and more moistness.
I think part of the problem was that I used a combination of toasted and non-toasted coconut – I should have gone with all non-toasted and left the toasted as a garnish. I also should have baked it a little less – in my pan and oven the hour cook time was definitely too long.
I added mini chocolate chips to the cake batter and after it was done baking and cooling I used the remaining coconut milk to make a chocolate glaze for the cake and dressed each slice up with some coconut gelato, chocolate sauce and toasted coc0nut garnish.
Over all I do like this cake but I think it could have been better – I’ll see what I can come up with next time. If you’d like to try it yourself head over to Carmen’s site for the recipe. Don’t forget to take a look at the TWD blogroll for more coconut tea cake variants.

Yum to both! I really enjoyed the ganache inside the DDL cookies. VERY good. And your cake looks so good with that chocolate glaze!

Both the dulce de leche duos and the coconut tea cake look amazing. I thought the duos were better unfilled, as I found them to be too sweet with the filling

We are not coconut fans but we can abide it. You made it look terrific and with the chocolate, I am thinking, I should give it a try.

I can see how the dulce de leche filling would make the duos a bit too sweet – that is why I went for bittersweet chocolate and salt along with the caramel

Both look wonderful – truly. I agree – the baking time was much shorter for the coconut cake than the recipe called for… but it still was a great cake – one of my favorites!
