Yum what a great idea to load them up with ice cream. I had to be different with mine and dipped them in white chocolate! YOur cookies look great!

I love these cookies. I also made ice cream sandwiches out of them a couple of months ago — with lemon sherbet — and they were delicious.

I have read the same thing quite a few times now about these cookies – that they are so surprisingly good. Now I am really looking forward to making them.
I LOVE eggnog, and your idea for making it into ice cream just sounds FABULOUS!

I agree! I thought they would be crispy too and was soooo pleased when they turned out chewy, even the next day! Course they’re gone now LOL
