This week I decided to make the Cran-Apple Crisps selected by Em of The Repressed Pastry Chef. I was rather excited about this one. I love the cranberry apple combination and I really appreciated the idea of the individual crisps.
I actually decided to make two versions of this one:

First, the recipe as it was written (well, almost). I did make a few changes – I substituted brown sugar for some of the sugar in the filling and added a little spice (cinnamon and ginger) to the filling.

Then, inspired by the playing around section, I made banana pineapple crisps as well. I added coconut directly to the filling on this one as well as some brown sugar and a little spice.
I think both versions are quite tasty, although both “Prince Charming” and I preferred the Cran-Apple Crisps. One thing “Prince Charming” did note is that you really want to get a cranberry or two in every bite of the cran-apple version. His first bite just happened to be all apples and crisp and he wasn’t very impressed but his second bite had a couple cranberries in it and he said it made a world of difference.

These look delicious! I added bananas to the apple crisp and it was great too.
