Tuesday has very nearly come and gone, so we’re aiming for a quickie this week.
Jayne, of the Barefoot Kitchen Witch, chose Coconut Butter Thins for this week’s recipe. Based on the P&Q the groups results on this one were all over the board, although the recipe seemed very simple and straight forward…
Since the preparation method for these is so similar to previous recipes, I decided to forgo my step by step pictures this week.
As usual, I couldn’t resist changing up the recipe just a little bit.
1) the last two recipes we did had citrus zest in them and I was getting tired of buying fruit to zest that I really don’t use very much so I omitted the lime zest.
2) I substituted coconut extract for 1/3 of the vanilla extract because a number of TWDers said the coconut flavor didn’t come through very strongly and I wanted to enhance it a bit.
3) I added 1/3 of a bag of mini chocolate chips to my dough (you knew I just had to get some chocolate in there somewhere, right?)
4) I didn’t have any coriander on hand, so I opted for nutmeg in my cookies.
On to the pictures!

Here are my little squares of dough before putting them in the oven. As you can see, despite the fact that my pastry board has lovely rulers on each side I still managed to achieve a wide range of sizes. I included this before baking picture because there seemed to be a wide range of spreading results in the P&Q – I wanted you to see the before and after shots.

And here are the finished cookies. As you can see, they are very pale with just a hint of golden color on the bottom. It took me 2 pans of cookies before I achieved this color – and by that time I was down to 10-12 minutes per sheet, much shorter than Dorie’s recommended 18 – 20 minutes.
In my opinion these cookies were just OK. They are, as their name implies, thin and crispy which is not my favorite cookie texture. I don’t hate them by any means, but I also don’t love them. Interestingly enough, I found the dough to be quite flavorful and I enjoyed a couple of pre-baked squares of it very much (not to mention licking the paddle attachment and scraping the bowl for every last scrap of dough).

Sounds like we had a very similar experience with these cookies. I liked them but didn’t love them. The dough was good though! Great idea to add chocolate chips

I love the idea of adding chocolate, but would miss the lime zest. IMO, the lime zest really made this recipe.

They certainly held their shape pretty well. The chocolate was a tasty addition, too.
