I’m feeling a little under the weather this week so I’m going to keep this short. This week’s TWD challenge was selected by Rebecca of Ezra Pound Cake; she chose Savory Corn and Pepper Muffins on page 6 of Dorie’s Baking:From My Home to Yours.
Luckily this was a quick and easy recipe to throw together…
For the most part this was a pretty standard sweet corn muffin recipe.

We have our wet ingredients – no surprises there; butter and butter milk.

And the dry ingredients – here we do have the addition of black pepper, chili powder and in my case chipotle chili powder

Then we have the goodies! Corn kernels aren’t too surprising, but then these little muffins are packed with cilantro, jalapenos and red peppers (I roasted my red peppers).

I served the muffins with a chicken cacciatore dish. These muffins packed quite a punch, but both “Prince Charming” and I enjoyed them. I’m sure they would have been better with a chili or a hearty soup, but they certainly weren’t bad with the chicken cacciatore.

They sure look nice, but I took the safe route and made a chocolate tart.

They look great next to your chicken cacciatore. I served them with chili, and they were really good, too. Hope you are feeling better!!
